Chicken Adobo

                                                   
Ingredients: (Rekado)
   :
Marinate: (Ibabad)
2x - Chicken Legs (thigh&Legs together cut into 6pcs.)
3tbsp - Vinegar
4tbsp - Soy sauce                                
1tbsp - sugar
5-6 - garlic cloves
 
Saute: (igisa)
1tbsp sugar
1/2 - of big red onion (don't saute them all leave some for later)
1tbsp - whole peppercorns
4 - bay leaves (this is also when you add  the egg if you want to have  egg)

1/2 glass - water, 1tbsp soysauce and 1tbsp vinegar
1/2 tsp - fish sauce (you can totally omit this if you want.)

3 eggs (optional)
broccoli (optional)

Procedure:

First prepare everything, cut the whole legs into 3 pieces each,. You can just use 6 pcs legs or 4 big pcs of thigh, if you don't want to cut it yourself.

You can also just use 6pcs. thigh fillet if you want it to be less oily (and a bit more healthy). I just personally prefer using bone in and skin on cause for me it taste better...

Please don't use chicken breasts to this recipe though, I know it's healthier. But it will just make the chicken breasts too dry and gummy, it takes more than 30 mins. to cook this recipe, definitely not for chicken breasts.

Put the chicken in a bowl when done cutting them, set it aside.

Prepare the garlic and onion. 1/2 of the onion and 6 garlic cloves. Mash the garlic the way I did at the video, it will help you peel it faster, it will also give a better flavour when done like this

Place the garlic in a bowl with the chicken, then add the rest of the ingredients for the marinade
3tbsp vinegar, 4tbsp soy sauce and 1tbsp sugar. mix them all together, try to rub the garlic onto the chicken as much as you can.  then set it aside.

place a saucepan, (kaserola) over a low heat.
add 2 tbsp of non flavoured oil like, canola, vegetable or rapeseed oil. then add the 1 tbsp brown sugar before the oil gets too hot.. be very careful not to burn your sugar, it will make your dish taste bitter. then add half of the onion you've sliced earlier. keep the rest for later.
Saute for 2 mins.

Add the chicken, but not the marinade, save it for later as well.
When all the chicken is in the pan, turn up the heat to medium-high heat, then put the lid on . let it cook for 5mins. you can start boiling eggs at this point. when the eggs are done, peel it and set it aside.

after 5 mins, turn the chicken, let it boil for another 10 to 15 mins. or until the sauce starts to look like it gained more oil.. (nagmantika na)
when it start looking like that, turn the chicken again, and add what was left from the marinade earlier from earlier, add the onion, bay leaves, and whole peppercorns. leave it for another 5 to 10mins. depending on the sauce make sure it doesn't dry out.

add the eggs, then add the water, add 1 tbsp of soy sauce 1 tbsp of vinegar and 1/2 tsp fish sauce to adjust the taste. bring it to a boil. keep turning the eggs make sure it's covered with the brown sauce..

turn off the heat when the chicken is done. cut the thickest part of the chicken to see if it's all white inside. or use a meat thermometer if you have.
if there's a bone, the meat should look like it shrunk and starts to show the bone inside.

taste it, if the sauce taste strong then add a bit more water. No more than a cup. the sauce should neither be watery nor dry..
add 1/2 tsp of sugar if you want a bit more sweetness as well. don't add anymore soy sauce.

leave it for an hour or 2 before you serve it (overnight is better), specially on a hot steaming rice.
Discard the bay leaves and garlic(if you're not a fan).

 WOW what fun! the children enjoyed this place so much!

They've even manage to talk me into riding one of the big pirate ship, and I said YES.. because hey! my 6 y/o son wants to go, if he's brave enough to ride one, then I should be too.. right?

well... guess what I'm never gonna be riding again!! just add it to the list of my scary rides.. next to big roller coasters and log flume! (or maybe I can just ride at the middle part of the ship.. NOT at the very back!!)







So glad I've still got a 4y/o daughter who's more than happy to ride a kiddie/small rides with me.. (our favourite carousel and ferries wheel) not sure for how long though..  :-)  my son can go and ride with his Daddy from now on.. hehehe

So I guess we've still got few years before I became one of those mummies who just stand there carrying the bags and coats while everyone's out riding all the rides I'm too scared to ride! (wuss!)
yeah I know! its either that or I die of heart attack!

It took us 2 days to see most of the place, we didn't get to play at the duplo area (blaming the long queues and the long walk!) good thing we got the 1 year pass (ticket/card) for the 4 of us. they are so worth it.

Guess where we will be on our next holiday!

The kids favourite rides are:

1.  Atlantis submarine
2. Vikings river splash, you'll get wet here, have some water proof coat.
3. Dragon roller coasters
4, Legoland driving lessons, they have both for toddlers (2-4) and bigger kids 5 and up
5. Fairy tale brook 
6. Brickville

we didn't get to play at the Drench tower, cause we didn't brought swimsuits. I bet the kids would love it though. I wouldn't bother with the Fire Academy, that's the only bit we regretted queuing for. we didn't really enjoy it cause we didn't know what we're doing, the staff wasn't very helpful

Tips:

1. Try to come here right before the English school holiday starts.The place tends to get really busy like 60mins. queuing time busy! waiting for an hour with kids is not fun at all.. we went here July 21st, it's nearing the end of Scotland school holidays but the English school holidays were just about to start. So we get to enjoy every rides.

2. Look out for promos.. specially nearing the holidays, this is when they give really good deals with their prices, we got a promo for annual pass and this was very lucky because the promo only lasted for 2 days (friday-saturday) it was a great timing.

3. take a picnic with you if you are able to. food here are very costly too, even for a snack or bottled water. We've each brought a bag with water, sandwiches and sweeties in it. nobody stopped us so don't worry about that. It kept them full till 4pm, kids are free to eat by this time. 

4. Come here before your kids gets older like before 9y/o and above, I don't think my kids would enjoy it as much if they're that age it might get too boring for them. They would probably enjoy other themed parks like Alton towers maybe? My kids who were 4 and 6 years old were the perfect age for this place.




Enjoying life with kids while they're young is the best part of parenthood!

Moving to UK

Life in UK!

it's been a year now since we move here, and now I'm finally feeling a lot more settled, I can finally start blogging again! yay!

I decided to make a whole new blog for this, because well.. everything is new! new life, new adventure. 

I'm still thinking what to put here, but I'm guessing, there will be a lot of topics since everything here is new to me.

It will still be personal blogs, I hope everything will be a lot more exciting, I'm sure to be posting stuff about our travels here in UK, food (restaurants or recipes!) yes you heard it right Recipes! Because we can't afford to hire personal cooks anymore, I'll have to do all the cooking by myself now! so there you go, another new thing to look forward to. or not?! hahaha

And of course stuff about my Family, My kids will be going to school here and of course it will all be new to them, it will be nice to write them down something to read for when they're all grown up and wanted to look back, from when it all started ;-)
